BLT Burger Restaurant Las Vegas History | A Vintage Las Vegas Strip Memory at The Mirage

From Tiger Habitat to Gourmet Burger Joint
If you walked into The Mirage’s south entrance around 2008, you’d never expect the space once occupied by Siegfried & Roy’s White Tiger Habitat to become a burger restaurant. Yet that’s exactly what happened when Laurent Tourondel’s BLT Burger opened its doors on July 1, 2008. The transformation told a quiet story about vintage Las Vegas shifting priorities: celebrity-chef food was becoming as magnetic as the casino spectacles that once defined the Strip.
A French Chef’s American Obsession
“BLT” didn’t stand for bacon, lettuce, and tomato—it stood for Bistro Laurent Tourondel. The French-trained chef, already celebrated for BLT Steak, BLT Fish, and BLT Prime, tackled the American hamburger with the same artistry he brought to fine dining. His signature patty blended chuck, sirloin, and brisket, while alternative proteins like American Kobe beef, lamb, and salmon gave diners room to explore. A Vietnamese-inspired creation drawing from the bánh mì combined shrimp, pork, pickled vegetables, cilantro, and spicy mayo, revealing Tourondel’s global palate. Fries came in sweet potato and chili-cheese varieties, and glass-bottled sodas sat alongside the cocktails.
Boozy Shakes and Late-Night Energy
What truly set BLT Burger apart in Las Vegas Strip history was its milkshake program. By 2015, roughly 18 varieties graced the menu—Grandma’s Treat layered Maker’s Mark bourbon with vanilla ice cream and caramel, while the Stay Puft toasted marshmallows into a sundae-like indulgence. The restaurant stayed open until 4 a.m., making it the go-to spot for gamblers and nightclub regulars craving a substantial meal well past midnight. Its youthful, rock-and-roll atmosphere kept the energy high long after the showgirls had gone home.
The End and the Legacy
In April 2016, MGM Resorts and Tourondel mutually ended their operating agreement. Within days, LVB Burgers & Bar took over the space on April 6, signaling yet another chapter in The Mirage’s ever-evolving identity. For nearly eight years, BLT Burger had anchored the late-2000s gourmet-burger boom on the Strip.
Looking back through a vintage Las Vegas lens, BLT Burger represents something specific: the moment when a chef’s creative vision for a humble burger could draw crowds to a resort famous for its fire-breathing lions and white tigers. It was indulgent, unapologetically fun, and deeply of its era. For those who slurped a spiked shake at 3 a.m. near the old tiger habitat, it remains a flavor on the tongue and a memory etched into the Strip’s living history.
